Le refermer et le reficeler.<br><br>Le faire dorer sur toutes ses faces, m\u00eame les bouts.<br><br>Ajouter les gousses d&#8217;ail, le vin blanc, le fond de veau. Surveiller la cuisson pendant 1 heure en tournant le r\u00f4ti.<br><br>Ajouter les pruneaux restants autour dans la cocotte, ainsi que le zeste d&#8217;orange.
